These bars are what I make when I want something that feels like a treat but actually nourishes my body at the same time. The crumble is golden and buttery, the berry filling is jammy and bright, and the whole thing comes together with simple, wholesome ingredients. I always add the collagen powder because it bumps the protein up and you truly can’t taste it. They’re perfect for meal prepping a week of snacks, bringing to a gathering, or enjoying your tea. Make them once and I promise they’ll become a regular in your kitchen. 🌿

INGREDIENTS

🌾 THE CRUMBLE
1½ cups Oat flour or all-purpose flour
1½ cups Old fashioned rolled oats
4 scoops Collagen powder (optional, adds protein and nutrients)
½ cup Coconut sugar
½ tsp Fine sea salt
½ cup Cold vegan butter or regular butter, cubed and room temperature
½ cup Solid coconut oil
🫐 THE BERRY FILLING
1 cup Fresh blueberries (or frozen)
1 cup Frozen mixed berries
⅓ cup Coconut sugar (add a little more if you like it sweeter)
1 tbsp Cornstarch or tapioca starch
½ tbsp Lemon juice, freshly squeezed
METHOD
1. Preheat your oven to 350°F and grease a 9x9 square baking pan.

2. Make the crumble: in a large bowl, mix together oat flour, oats, collagen (if using), coconut sugar, sea salt, butter, and coconut oil until the mixture resembles coarse, chunky sand. Don’t overmix, you want texture here.
3. Press two thirds of the crumble mixture firmly into the bottom of your prepared pan. Set the remaining third aside.
4. Make the filling: warm the berries and coconut sugar together in a small saucepan over low-medium heat, stirring gently until the sugar has melted and the berries begin to soften.
5. Remove from heat and stir in the lemon juice and starch until fully combined. The mixture will thicken slightly as it cools.
6. Pour the berry filling evenly over the crumble base, spreading it all the way to the edges.
7. Sprinkle the remaining crumble mixture generously over the top of the berries.
8. Bake for 35 minutes, or until the top is golden brown and the filling is bubbling gently at the edges.
9. Let the bars cool in the pan for at least 30 minutes before cutting. This step is important, they need time to set! Enjoy immediately or store in an airtight container for up to 5 days or freeze them for up to 3 months. ✨
