Hearty Sweet Potato Coconut Curry Soup - GF/DF/V

Ingredients:

  • 2 medium sweet potatoes, peeled and cubed

  • 3 carrots, peeled and cubed

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 1 cup coconut milk

  • 1 tbsp cold-pressed olive oil

  • 4 cups water

  • 1/2 tsp curry powder

    1/2 tsp turmeric

  • Salt and pepper to taste

Directions:

  1. Heat the olive oil in a medium pot over medium heat. Add the diced onion and minced garlic, and sauté for about 1 minute until fragrant.

  2. Add the sweet potatoes and carrots to the pot, followed by the curry powder and turmeric. Stir well and cook for another 2 minutes.

  3. Pour in 4 cups of water, ensuring the vegetables are fully submerged. Add more water if necessary.

  4. Increase the heat to medium-high and bring the mixture to a boil. Once boiling, reduce the heat to medium and keep the lid slightly ajar to prevent overflow.

  5. Cook until the vegetables are tender and can be easily pierced with a fork, about 20-25 minutes.

  6. Turn off the heat and let the soup cool for 5 minutes. Use an immersion blender or a potato masher to puree the soup until smooth.

  7. Stir in the coconut milk until fully combined. Season with salt and pepper to taste.

  8. If the soup is too thick, add additional water, 1/2 cup at a time, until you reach your desired consistency. Adjust spices as needed.

  9. Serve hot and enjoy!
